Mashed Potato Bar
Move over candy bars and late night food trucks. Mashed potato bars are coming through. One of the latest trends in party food is the mashed potato bar and I can see why. With all of their comfort food quality and all of the topping variations available mashed potatoes seem like the perfect celebration food. Not a fan of potatoes? Add variety by adding mashed sweet potatoes and cauliflower into the mix too. As originally posted on MyVega.com
Ingredients
4 large washed, skin on, organic russet potatoes (or sweet potatoes)
2 Tbsp vegan butter
1/4 cup unsweetened plain almond milk
Salt
Directions
Place potatoes in a large pot of boiling, lightly salted water
Bring back to a boil over medium heat then lower to a simmer and cook until fork tender
Drain potatoes, cool slightly
Add vegan butter and almond milk
Mash until creamy (you can use a hand mixer if you like them really creamy)
Serve family style in a large bowl

Ingredients
1 cup sweet potato (cooked, peeled and chilled)
1 cup cold almond milk
¼ cup gluten-free oats
2 Tbsp almond butter
1 serving Vega One Nutritional Shake Natural
½ tsp vanilla
½ tsp cinnamon
¼ tsp nutmeg
Directions
Blend
Optional: top with your fave whipped cream and chopped nuts
